Labor Day Rewind

Our Labor Day weekend started out with a much anticipated visit from Mallory and her boyfriend Steven. Mal and Steven were our first visitors in North Carolina. Needless to say, I was so excited I could hardly stand it!

For the most part, we had a very mellow weekend. On Saturday, we went to eat a delicious restaurant downtown called Mozelle’s. It is decorated so cute and I think there isn’t a bad dish on the menu.

After lunch, we headed over to the Wake Forest to take a look around. The campus was deserted because all the students were at the Wake vs. Baylor game.

Wait Chapel is the most iconic building on campus. I was a bit disappointed with the interior. I expected it to be gorgeous and grand – but I was wrong.

Later the night, we cheered on the Auburn Tigers. Thankfully we defeated La. Tech and all were happy in the Tew household. For dinner, I made a Hamilton family favorite – Taco Soup.
We wear this recipe out in the fall! It is so easy and always a crowd pleaser! Below is the recipe:

Ground Beef
1 chopped onion
3 cans chili beans
1 can chopped tomatoes
1 can tomato sauce
1 can corn
1 can chopped green chilies
1 package taco seasoning
1 package ranch dressing mix
1 – 2 cups water (optional)
Shredded cheddar cheese
Frito’s

Saut̩ ground beef and onion until cooked thoroughly and drain. Add beef, onions, chili beans, chopped tomatoes, tomato sauce, corn, green chilies, taco seasoning and ranch dressing in large sauce pot РStir. Add water if desired. Cook on medium heat for approximately 25- 20 minutes stirring occasionally. Garnish with cheese and fritios.

I am so glad you guys had a relaxing Labor Day weekend! You deserved to have some visitors instead of always having to be on the road:) The taco soup looks yummy. I can't wait to get a little chill in the air, so I can try the recipe out too! Counting down the hours until tomorrow!!!
